Not So Spooky Halloween Sugar Cookies

It’s raining, it’s pouring, it’s actually gusting 50mph, but the good news is, Elle and I are safe and sound at home, and get a day off from school/work.

Shortly after breakfast, and a small dance party, we decided today was the perfect day to make some Halloween sugar cookies.

I have tried many different recipes over the years baking with Elle, and this one is my favorite one. Below are the ingredients you’ll need:

INGREDIENTS

  • 1 cup (2 sticks) softened salted butter
  • 1 cup Granulated Sugar
  • 1 Large Egg
  • 1 tablespoons Vanilla Extract
  • 2 teaspoons Baking Powder
  • 3 cups All-Purpose Flour
  • Add the 2 sticks of butter and 1 cup of white sugar to your mixer.  
  • Cream the butter and sugar until it is completely mixed (about 3 minutes)
  • Add 1 tablespoon of vanilla and 1 egg.
  • Mix the cookie dough until light and fluffy.
  • Add 2 teaspoons of Baking Powder and mix.
  • Mix in the 3 cups of flour one cup at a time. 
  • Roll a handful of the dough out on a prepared surface until it’s about 3/8″ thick.
  • Put it in the freezer for about 5-10 minutes; it helps to cut out shapes
  • Cut out shapes with cookie cutters (got ours at Michael’s)
  • Bake in an oven pre-heated to 350 degrees for 7 minutes. They will look undercooked when they come out, but let them sit and they will harden, without being overly hard the way some sugar cookies are.
  • Let your cookies cool on a cookie rack (take them off the baking tray asap) and then they are ready for frosting.

Side note: it was hard to let go of my OCD tendencies, but I let Elle fully decorate these, and she was SO happy. So if there are other OCD mama’s like me, let the kids decorate, it won’t be pretty, but so worth their joy.
